Ingredients
- 1 can Campbell's Condensed Oxtail Soup
- 1½ lb lean minced beef
- 2 onions, chopped
- 1 carrot, peeled and sliced
- 1½ lb frozen peas
- 1 sprig fresh or ½ teaspoon dried thyme, fresh or dried
- 1 teaspoon Worcestershire sauce
- salt and pepper
- 1½ lb mashed potato
- parsley, chopped, to garnish
Method
- Combine the condensed oxtail soup, minced beef, onions, carrots, frozen peas, thyme, Worcestershire sauce, salt and pepper in a large saucepan. Simmer over low heat for one hour.
- Spoon the mixture into a shallow ovenproof dish. Spread the mashed potato over the meat and fluff it up with a fork.
- Pre-heat oven to 180°C (350°F or Gas Mark 4) and bake for 30 minutes or until golden brown.
- Sprinkle with parsley and serve.
