Cottage Pie

Ingredients

  • 1 can Campbell's Condensed Oxtail Soup
  • 1½ lb lean minced beef
  • 2 onions, chopped
  • 1 carrot, peeled and sliced
  • 1½ lb frozen peas
  • 1 sprig fresh or ½ teaspoon dried thyme, fresh or dried
  • 1 teaspoon Worcestershire sauce
  •   salt and pepper
  • 1½ lb mashed potato
  •   parsley, chopped, to garnish

Method

  1. Combine the condensed oxtail soup, minced beef, onions, carrots, frozen peas, thyme, Worcestershire sauce, salt and pepper in a large saucepan. Simmer over low heat for one hour.
  2. Spoon the mixture into a shallow ovenproof dish. Spread the mashed potato over the meat and fluff it up with a fork.
  3. Pre-heat oven to 180°C (350°F or Gas Mark 4) and bake for 30 minutes or until golden brown.
  4. Sprinkle with parsley and serve.

Sprinkle with parsley before serving.
