Ingredients
- 4 eating apples
- orange, grated rind and juice of 1
- 4 tbsp mincemeat
- 1 egg white, lightly beaten
- 40g/1½oz ground almonds
- 25g/1oz caster sugar
Method
- Preheat the oven to 200C/400F/Gas 6. Peel and core the apples, then brush with the orange juice. Fill the centre of each apple with mincemeat, making sure that you pack it down well.
- Put the egg white into a small bowl. Mix the almonds, sugar and orange rind in a separate bowl. Coat the apples in the egg white, then the almond mixture until they are completely covered.
- Place the apples in a buttered ovenproof dish and bake for 50-60 minutes until the apples are tender and the coating is crisp and golden brown in colour. Serve hot with custard, crème fraîche or yogurt.
