Cumberland Sauce

Ingredients

  • 1 orange, peel removed, juice squeezed
  • 1 lemon, peel removed, juice squeezed
  • 8oz/225g redcurrant jelly
  • 1 shallot, chopped
  • ¼pt/150ml Port or red wine
  • ¼ tsp/2.5ml pale mustard
  • pinch cayenne pepper
  • pinch ground ginger

Method

  1. Peel the orange and the lemon, removing only the outer skin. Cut the rind into fine shreds.
  2. Squeeze the fruit juice and strain into a pan. Then add the remaining ingredients with the needle shreds. Simmer for 10 minutes and cool.
