Ingredients
- 1 orange, peel removed, juice squeezed
- 1 lemon, peel removed, juice squeezed
- 8oz/225g redcurrant jelly
- 1 shallot, chopped
- ¼pt/150ml Port or red wine
- ¼ tsp/2.5ml pale mustard
- pinch cayenne pepper
- pinch ground ginger
Method
- Peel the orange and the lemon, removing only the outer skin. Cut the rind into fine shreds.
- Squeeze the fruit juice and strain into a pan. Then add the remaining ingredients with the needle shreds. Simmer for 10 minutes and cool.
