Royal Icing

Serves One coat for a 23cm/9in round or 20cm/8in square cake

Ingredients

  • 4 egg whites
  • 1½lb/675g icing sugar

Method

  1. Mix the egg whites with 3 tbsp/45ml of sugar. Gradually add the remaining sugar and mix well until the icing is soft, white, fluffy and will hold its shape. More sugar can be added if the mixture is too sloppy.
