Citrus Salad

Serves 4 Prep 15 min Cook 5 min

Ingredients

  • 1 grapefruit
  • 1 pink grapefruit
  • 4 oranges
  • 1tbsp runny honey
  • 25g (1oz) pumpkin or sunflower seeds

Method

  1. Cut off the top and bottom of the ordinary grapefruit, then use a sharp knife to peel away the pith. Slice into the flesh of each segment to remove the fruit, then tip into a bowl with any juice.
  2. Do the same with the pink grapefruit and the oranges. Add the honey.
  3. Toast the pumpkin or sunflower seeds in a dry frying pan until golden, then sprinkle them over the fruits. Spoon into bowls and serve with a dollop of yogurt.

Serve with a dollop of yogurt.
