Ingredients
- 1.5kg/3lb 5oz potatoes
- 4 tbsp duck fat or olive oil, reserved
- 3 thyme
- salt
- pepper
Method
- Preheat the oven to 200C/400F/Gas 6. Rinse the potatoes and pat dry with kitchen paper; do not peel. Cut into small chunks and dry well.
- Heat the fat in a roasting tin in the oven for 5-7 minutes. Toss in the potatoes, thyme and bacon, if using, until well coated. Roast for about 1 hour, turning once, until the potatoes are browned and crisp. Serve with the duck.
Notes
For extra flavour, add 100g/3¾oz of thin smoked back bacon strips to the potatoes before roasting.
