Spiced Turkey, Orange and Watercress Salad

Serves 4 Prep 30 min Cook 5 min

Ingredients

  • 1 orange, finely grated zest and juice
  • 1 tbsp honey
  • 1 heaped tsp wholegrain mustard
  • 500g lean turkey strips
  • 2 tsp sunflower oil
  • 6 salad onions, thinly sliced
  • 120g watercress
  • 2 oranges, segmented
  • 100g cherry tomatoes, halved

Method

  1. Toss together the orange zest and juice, honey, wholegrain Dijon mustard and turkey strips. Leave to marinate for 30 mins.
  2. Heat the oil in a wok and stir-fry the turkey strips over a high heat for 4-5 minutes, until golden brown. Add the salad onions, remove from the heat and toss.
  3. Divide the watercress, orange segments and tomatoes between plates and spoon the turkey over the top. Drizzle with pan juices and serve.
