Spiced Drumsticks

Ingredients

  • 2tbsp tomato sauce
  • 4½tsp ground coriander
  • 1tsp ground cumin
  • 2tbsp dark soy sauce
  • 2tbsp dark soft brown sugar
  •   salt
  •   black pepper, freshly ground
  • 8 chicken drumsticks
  • 1 sprig fresh coriander, to garnish

Method

  1. Mix together the tomato sauce, coriander, cumin, soy sauce, sugar and seasoning in a shallow dish until well combined. Add chicken and turn to coat. Cover and leave to marinate for 1 hour. Meanwhile, preheat oven to 200°C/400°F, Gas Mark 6.
  2. Transfer the drumsticks to a baking sheet and bake in the preheated oven for 30 minutes, basting occasionally, until tender.
  3. Garnish with coriander. Serve immediately with seasonal salad.
