Ingredients
- 2tbsp tomato sauce
- 4½tsp ground coriander
- 1tsp ground cumin
- 2tbsp dark soy sauce
- 2tbsp dark soft brown sugar
- salt
- black pepper, freshly ground
- 8 chicken drumsticks
- 1 sprig fresh coriander, to garnish
Method
- Mix together the tomato sauce, coriander, cumin, soy sauce, sugar and seasoning in a shallow dish until well combined. Add chicken and turn to coat. Cover and leave to marinate for 1 hour. Meanwhile, preheat oven to 200°C/400°F, Gas Mark 6.
- Transfer the drumsticks to a baking sheet and bake in the preheated oven for 30 minutes, basting occasionally, until tender.
- Garnish with coriander. Serve immediately with seasonal salad.
