milk

double cream, unwhipped

Worcestershire sauce

parsley, chopped

mushrooms, sliced, to serve
Method
- Melt 1-2 ozs butter. Add ½ chopped onion and 4 ozs chopped mushrooms and fry for 1 minute.
- Add a glass of white wine and boil for 1 minute.
- Add 3 fl. ozs milk and 4 fl. ozs unwhipped double cream.
- Simmer 5-6 minutes then add ½ teasp Worcestershire sauce and 1 tablesp chopped parsley. Blend until smooth.
- Serve with 2-3 sliced mushrooms on top.
