Mushroom Soup

Ingredients

  • 1-2 ozs butter
  • ½ onion, chopped
  • 4 ozs mushrooms, chopped
  • 1 glass white wine
  • 3 fl. ozs milk
  • 4 fl. ozs double cream, unwhipped
  • ½ teasp Worcestershire sauce
  • 1 tablesp parsley, chopped
  • 2-3 mushrooms, sliced, to serve

Method

  1. Melt 1-2 ozs butter. Add ½ chopped onion and 4 ozs chopped mushrooms and fry for 1 minute.
  2. Add a glass of white wine and boil for 1 minute.
  3. Add 3 fl. ozs milk and 4 fl. ozs unwhipped double cream.
  4. Simmer 5-6 minutes then add ½ teasp Worcestershire sauce and 1 tablesp chopped parsley. Blend until smooth.
  5. Serve with 2-3 sliced mushrooms on top.
