Potato Cakes and Poached Egg

Serves 4 Prep 10 min Cook 15 min

Ingredients

  • 2 x 400g pkts ready-made mashed potato
  • 100g mature Cheddar cheese, grated
  • 100g breadcrumbs
  • 6 tbsp olive oil
  • 1 x 125g pkt asparagus tips, stalks trimmed
  • 4 large barn eggs

Method

  1. Mix the mash with the cheese in a bowl. Shape into 4 patties and coat them in the breadcrumbs. Chill until ready to use.
  2. Heat 3 tbsp oil in a pan and fry 2 potato cakes without moving them for 3 mins; turn and fry until golden. Keep warm and fry the other 2 with the rest of the oil. Meanwhile, cook the asparagus for 2-3 mins in boiling water until just tender; drain well.
  3. Bring a pan of water to the boil. Carefully crack in the eggs and simmer for 3 mins until the whites are set. Remove the cooked eggs with a slotted spoon.
  4. Place a potato cake on each plate, top with some asparagus and an egg. Season with salt and freshly ground black pepper.
