Ingredients
- 250g long grain rice
- 500g frozen broad beans
- 500g frozen peas
- 1 orange, grated rind and juice
- 1 orange, segmented
- 4 tbsp fresh parsley and mint leaves
- 1 tbsp fresh chives, chopped
- Parmesan cheese, shavings
Method
- Cook the rice for 10-12 minutes. Drain well and allow to cool.
- Put the broad beans in boiling water for 2-3 minutes then add the peas and cook for a further 2-3 minutes.
- Drain and refresh with cold, running water.
- Mix rice, vegetables and orange segments together.
- For the dressing, mix the orange juice, rind and herbs and toss over the salad.
- Add Parmesan shavings just before serving.
