Broad Bean, Pea and Rice Salad with Orange Herb Dressing

Ingredients

  • 250g long grain rice
  • 500g frozen broad beans
  • 500g frozen peas
  • 1 orange, grated rind and juice
  • 1 orange, segmented
  • 4 tbsp fresh parsley and mint leaves
  • 1 tbsp fresh chives, chopped
  •   Parmesan cheese, shavings

Method

  1. Cook the rice for 10-12 minutes. Drain well and allow to cool.
  2. Put the broad beans in boiling water for 2-3 minutes then add the peas and cook for a further 2-3 minutes.
  3. Drain and refresh with cold, running water.
  4. Mix rice, vegetables and orange segments together.
  5. For the dressing, mix the orange juice, rind and herbs and toss over the salad.
  6. Add Parmesan shavings just before serving.
