Meat Balls

Ingredients

  • 225g mince
  • 1 egg
  • 40g lambs kidney, diced very small
  • 100g / 2oz suet, shredded
  • 1 med onion, finely chopped
  • 50g white breadcrumbs
  • 1 tsp Worcester sauce
  •   salt and pepper

Method

  1. Season mince with salt and pepper and mix with 1 egg. Keep very cold with ice underneath.
  2. Dice lambs kidneys very small. Mix kidneys and suet in an electric mixer.
  3. Add the kidney and suet mixture to the mince mix.
  4. Fry the kidney and suet mixture, then cool and add to the mince mix.
  5. Add 1 medium finely chopped onion, 50g white breadcrumbs, and 1 tsp Worcester sauce to the mixture and combine well.

Notes

Keep mixture very cold with ice underneath while preparing. Mix kidneys and suet in electric mixer then add to mince mix. Fry then cool and add to mix. The back of the card contains a partially obscured recipe for Madeleines which could not be fully transcribed.
