Cheesecakes (Individual)

Ingredients

  •   ginger biscuits, crushed in electric mixer
  •   nuts, optional
  •   butter, melted
  •   double cream, whipped up
  • 1 tub mascarpone
  •   lemon zest

Method

  1. Crush ginger biscuits in an electric mixer with nuts (optional) and melted butter.
  2. Press into base tins (cutters) and press down firmly.
  3. Whip up double cream with one tub of mascarpone and lemon zest mixed together. Put over bases.

Notes

Nuts are optional. Use cutters/base tins for individual portions.
