Ingredients
- ginger biscuits, crushed in electric mixer
- nuts, optional
- butter, melted
- double cream, whipped up
- 1 tub mascarpone
- lemon zest
Method
- Crush ginger biscuits in an electric mixer with nuts (optional) and melted butter.
- Press into base tins (cutters) and press down firmly.
- Whip up double cream with one tub of mascarpone and lemon zest mixed together. Put over bases.
Notes
Nuts are optional. Use cutters/base tins for individual portions.
