Rissoles or Porkburgers

Serves 6

Ingredients

  • ¼ lb minced cooked pork
  • ¾ lb mashed potato, from 1 lb potatoes before peeling
  • 1 level teaspoonful sage, finely chopped
  •   salt and pepper
  • 1 egg
  • a little fat, for frying

Method

  1. Mix all the ingredients together and form the mixture into 6 rissoles.
  2. Freeze them with rounds of waxed paper between so that they can be separated easily while they are still frozen.
  3. Fry the frozen rissoles in a little fat on both sides until they are golden brown and hot to the centre — fried straight from the freezer they need frying a little longer than usual on each side, or they can be put into the oven to complete the cooking.
