Swirly Fish Pies

Serves 2

Ingredients

  • 1oz butter
  • 1 small onion
  • 1oz flour
  • ¾ pint milk
  • 2oz (50g) cheddar cheese, grated
  • good inch dry mustard
  •   salt and pepper
  • 10oz (278g) cooked white fish (e.g. cod, haddock or whiting), flaked
  • 12oz (350g) potato, cooked and mashed

Method

  1. Melt the butter in a pan and sauté the onion until soft.
  2. Sprinkle on the flour and cook for a minute. Gradually add the milk and bring to the boil stirring continuously.
  3. Add the cheese and seasonings to taste. Flake the fish and carefully stir into the sauce. Spoon into individual dishes.
  4. Place the potato in a piping bag fitted with a star nozzle and starting from the centre, pipe outwards to cover the pies.
  5. Place under a low grill until golden brown. Serve with a side salad.
