Ingredients
- 1oz butter
- 1 small onion
- 1oz flour
- ¾ pint milk
- 2oz (50g) cheddar cheese, grated
- good inch dry mustard
- salt and pepper
- 10oz (278g) cooked white fish (e.g. cod, haddock or whiting), flaked
- 12oz (350g) potato, cooked and mashed
Method
- Melt the butter in a pan and sauté the onion until soft.
- Sprinkle on the flour and cook for a minute. Gradually add the milk and bring to the boil stirring continuously.
- Add the cheese and seasonings to taste. Flake the fish and carefully stir into the sauce. Spoon into individual dishes.
- Place the potato in a piping bag fitted with a star nozzle and starting from the centre, pipe outwards to cover the pies.
- Place under a low grill until golden brown. Serve with a side salad.
