Potatoes & Mackerel

Ingredients

  •   King Edward or Maris Piper potatoes, sliced
  •   smoked mackerel, bite-size pieces
  • ½ double cream and ½ milk double cream and milk, mixed together
  • 2 bay leaves

Method

  1. Slice King Edward or Maris Piper potatoes in an oven dish with smoked mackerel pieces (bite size).
  2. Pour over a mix of half double cream and half milk with 2 bay leaves.
  3. Place in oven at 190°C for about 1 hour and 15 minutes. Ready when potatoes are soft.
  4. Serve with peas and tomatoes.
