Rabbit Casserole

Ingredients

  •   rabbit pieces
  •   flour
  •   mushrooms, chopped
  •   carrot, chopped
  •   onion, chopped
  •   thyme
  •   parsley
  •   tomato puree
  •   white wine
  • a little stock

Method

  1. Coat rabbit pieces in flour.
  2. Fry chopped mushrooms.
  3. Brown rabbit and add to mushrooms.
  4. Then add chopped carrot and onion.
  5. Coat rabbit with thyme, parsley and tomato puree.
  6. Add white wine and a little stock.
  7. Cover with foil and cook for 1½ hours in oven at Gas Mark 6-7.
