Ingredients
- rabbit pieces
- flour
- mushrooms, chopped
- carrot, chopped
- onion, chopped
- thyme
- parsley
- tomato puree
- white wine
- a little stock
Method
- Coat rabbit pieces in flour.
- Fry chopped mushrooms.
- Brown rabbit and add to mushrooms.
- Then add chopped carrot and onion.
- Coat rabbit with thyme, parsley and tomato puree.
- Add white wine and a little stock.
- Cover with foil and cook for 1½ hours in oven at Gas Mark 6-7.
