Pizza Slices

Ingredients

  • 1lb tomatoes, skinned, chopped and seeds removed (or use a tin of chopped tomatoes)
  • 2 large French bread sticks
  • 3 tablsps tomato puree
  • 1 teasp dried oregano
  •   grated cheese
  •   dried basil
  •   salt and pepper
  •   olive oil or butter, melted
  •   fennel sprigs, to garnish

Method

  1. Skin fresh tomatoes, chop and remove seeds (or use a tin of chopped tomatoes).
  2. Cut bread into sloping 1 inch slices.
  3. Brush each slice with a little cold water.
  4. Mix together tomatoes, puree and salt and pepper.
  5. Spread mixture on each slice.
  6. Sprinkle with olive oil or melted butter and cheese.
  7. Bake 15 mins until crisp. Oven Gas Mark 6.
  8. Serve while hot.

Notes

Uncooked slices can be frozen and used within 1 month.
