Ingredients
- 1lb tomatoes, skinned, chopped and seeds removed (or use a tin of chopped tomatoes)
- 2 large French bread sticks
- 3 tablsps tomato puree
- 1 teasp dried oregano
- grated cheese
- dried basil
- salt and pepper
- olive oil or butter, melted
- fennel sprigs, to garnish
Method
- Skin fresh tomatoes, chop and remove seeds (or use a tin of chopped tomatoes).
- Cut bread into sloping 1 inch slices.
- Brush each slice with a little cold water.
- Mix together tomatoes, puree and salt and pepper.
- Spread mixture on each slice.
- Sprinkle with olive oil or melted butter and cheese.
- Bake 15 mins until crisp. Oven Gas Mark 6.
- Serve while hot.
Notes
Uncooked slices can be frozen and used within 1 month.
