Moroccan Potato Stew

Ingredients

  •   oil
  •   onions, chopped
  •   tomatoes, peeled, deseeded, finely diced
  • 1 tsp salt
  • 450ml water
  • 2 tbsp fresh coriander, chopped

Method

  1. Heat the oil in a pan, add the chopped onions and sauté over a medium heat until soft.
  2. Add the remaining ingredients, apart from the chopped coriander, and stir together well.
  3. Pour over 450ml (16fl oz) water and bring to the boil. Then cover and cook over a low heat for 20-30 minutes until the potatoes are tender.
  4. Serve hot with the chopped coriander.
