Ingredients
- oil
- onions, chopped
- tomatoes, peeled, deseeded, finely diced
- 1 tsp salt
- 450ml water
- 2 tbsp fresh coriander, chopped
Method
- Heat the oil in a pan, add the chopped onions and sauté over a medium heat until soft.
- Add the remaining ingredients, apart from the chopped coriander, and stir together well.
- Pour over 450ml (16fl oz) water and bring to the boil. Then cover and cook over a low heat for 20-30 minutes until the potatoes are tender.
- Serve hot with the chopped coriander.
