Ingredients
- 4 oz butter or margarine
- 4 oz caster sugar
- a few drops vanilla essence
- 1 large egg
- 8 oz self raising flour
- pinch salt
- 1 level teaspoon powdered cinnamon
- a few glacé cherries, for decoration, cut into small pieces
Method
- Cream the butter or margarine with the caster sugar until light and fluffy.
- Add vanilla essence and egg and beat well.
- Sieve flour, salt and cinnamon together then gradually stir into the creamed mixture until well blended.
- Put the mixture into a forcing bag fitted with a large star piping tube. Pipe on to a greased baking sheet.
- Decorate the top of each cookie with a small piece of glacé cherry.
- Bake on shelf above centre in a hot oven (425°F / Gas Mark 7) for 8-10 minutes or until golden brown.
