Ingredients
- 455 g (1 lb) strong plain bread flour, sifted
- 4 teaspoons baking powder
- 2 teaspoons salt
- 30 g (1 oz) butter or margarine
- 230 g (8 oz) mashed potato
- 400 ml (14 fl oz) milk and water mixed
- egg, beaten, for glaze
Method
- Set the oven at Gas Mark 7, 425°F, 220°C.
- Sift the flour, baking powder and salt into a large mixing bowl.
- Rub in the butter.
- Add the mashed potato and mix well until evenly distributed with the dry ingredients.
- Mix to a soft, fairly wet dough with the milk and water.
- Divide between the tins and brush the tops with beaten egg.
- Bake for 25 to 35 minutes until cooked. Turn out the loaves and cool on a wire rack.

Requires two 455 g (1 lb) loaf tins, greased and base-lined. Set oven at Gas Mark 7, 425°F, 220°C.
