Potato Bread

Serves two 455 g (1 lb) loaves Cook 30 min

Ingredients

  • 455 g (1 lb) strong plain bread flour, sifted
  • 4 teaspoons baking powder
  • 2 teaspoons salt
  • 30 g (1 oz) butter or margarine
  • 230 g (8 oz) mashed potato
  • 400 ml (14 fl oz) milk and water mixed
  •   egg, beaten, for glaze

Method

  1. Set the oven at Gas Mark 7, 425°F, 220°C.
  2. Sift the flour, baking powder and salt into a large mixing bowl.
  3. Rub in the butter.
  4. Add the mashed potato and mix well until evenly distributed with the dry ingredients.
  5. Mix to a soft, fairly wet dough with the milk and water.
  6. Divide between the tins and brush the tops with beaten egg.
  7. Bake for 25 to 35 minutes until cooked. Turn out the loaves and cool on a wire rack.

Notes

Requires two 455 g (1 lb) loaf tins, greased and base-lined. Set oven at Gas Mark 7, 425°F, 220°C.
