Ingredients
- 1 baby white cabbage, thinly shredded
- 4 spring onions, finely chopped
- 1 large carrot, finely shredded
- 75g (3oz) mature Cheddar, grated
- 6 tbsp mayonnaise
- freshly ground black pepper

- roast chicken, sliced
Method
- In a large bowl, mix together the thinly shredded baby white cabbage, finely chopped spring onions, finely shredded carrot, grated mature Cheddar and mayonnaise. Season with freshly ground black pepper.
- Divide among four small bowls or plates and snip over some cress. Serve with slices of roast chicken.
