Cheese Coleslaw with Roast Chicken

Serves 4

Ingredients

  • 1 baby white cabbage, thinly shredded
  • 4 spring onions, finely chopped
  • 1 large carrot, finely shredded
  • 75g (3oz) mature Cheddar, grated
  • 6 tbsp mayonnaise
  •   freshly ground black pepper
  •   cress
  •   roast chicken, sliced

Method

  1. In a large bowl, mix together the thinly shredded baby white cabbage, finely chopped spring onions, finely shredded carrot, grated mature Cheddar and mayonnaise. Season with freshly ground black pepper.
  2. Divide among four small bowls or plates and snip over some cress. Serve with slices of roast chicken.
