Ingredients
- 4 ozs caster sugar
- 2 egg whites
- 4 ozs desiccated coconut
- 1 sheet rice paper
- 6 glacé cherries
Method
- Place the rice paper on a baking tin.
- Put the egg whites in a mixing bowl and whisk at fast speed until stiff.
- Add the caster sugar and whisk until mixture regains its former stiffness.
- Add the coconut at slow speed until all mixed in.
- Drop mixture in dessertspoonsful on the rice paper and decorate each with a piece of glacé cherry.
- Bake for 30 minutes at 300°F (Gas Mark 3).
