Coconut Macaroons

Serves 12 Cook 30 min

Ingredients

  • 4 ozs caster sugar
  • 2 egg whites
  • 4 ozs desiccated coconut
  • 1 sheet rice paper
  • 6 glacé cherries

Method

  1. Place the rice paper on a baking tin.
  2. Put the egg whites in a mixing bowl and whisk at fast speed until stiff.
  3. Add the caster sugar and whisk until mixture regains its former stiffness.
  4. Add the coconut at slow speed until all mixed in.
  5. Drop mixture in dessertspoonsful on the rice paper and decorate each with a piece of glacé cherry.
  6. Bake for 30 minutes at 300°F (Gas Mark 3).
