Ingredients
- 2 tomatoes
- mushrooms
- celery, cut into lengths
- potato, cut into cubes
- carrot, cut into sticks
- turnip, cut into cubes
- cauliflower, cut into florets
- spinach, sprigs
- oil
- lemons, quartered
- small onions, peeled
- coriander, fresh if possible
- rosemary, fresh if possible
- salt and pepper
- soy sauce
- red wine vinegar
Method
- Put a selection of vegetables — 2 tomatoes, mushrooms, celery lengths, potato cubes, carrot sticks, turnip cubes, cauliflower and spinach sprigs — in a shallow oven dish with oil, quartered lemons and small peeled onions.
- Mix with coriander and rosemary (fresh if possible) and salt & pepper and soy sauce.
- Cook in middle oven at medium heat for 30–40 minutes.
- Sprinkle with red wine vinegar before serving.
