Roasted Vegetables

Ingredients

  • 2 tomatoes
  •   mushrooms
  •   celery, cut into lengths
  •   potato, cut into cubes
  •   carrot, cut into sticks
  •   turnip, cut into cubes
  •   cauliflower, cut into florets
  •   spinach, sprigs
  •   oil
  •   lemons, quartered
  •   small onions, peeled
  •   coriander, fresh if possible
  •   rosemary, fresh if possible
  •   salt and pepper
  •   soy sauce
  •   red wine vinegar

Method

  1. Put a selection of vegetables — 2 tomatoes, mushrooms, celery lengths, potato cubes, carrot sticks, turnip cubes, cauliflower and spinach sprigs — in a shallow oven dish with oil, quartered lemons and small peeled onions.
  2. Mix with coriander and rosemary (fresh if possible) and salt & pepper and soy sauce.
  3. Cook in middle oven at medium heat for 30–40 minutes.
  4. Sprinkle with red wine vinegar before serving.
