Fish Pie

Ingredients

  • 1 lb cod, skinned and chopped into bite-size pieces
  • 2 lb potatoes, sliced, cooked for 7-8 mins
  • ¼ pint milk
  • plenty butter, dotted over top
  •   grated cheese, sprinkled over top
  • 1 lemon, juiced
  • 1 teasp mustard
  • 1 teaspoon Worcester sauce
  • 1 teasp dried parsley
  • 1 teasp basil
  • ½ gm onion, finely chopped
  • 1 teasp olive oil

Method

  1. Prepare the lemon mix: combine juice of 1 lemon, 1 teasp mustard, 1 teaspoon Worcester sauce, 1 teasp dried parsley, 1 teasp basil, ½ gm finely chopped onion, and 1 teasp olive oil. Whisk all together.
  2. Slice the potatoes and cook for 7-8 minutes. Layer a dish with the potato slices. Season with salt and pepper.
  3. Cover the potato layer with the fish pieces, then pour over the lemon mix.
  4. Add a final layer of potatoes. Season with salt and pepper. Pour in ¼ pint of milk.
  5. Dot with plenty of butter. Sprinkle over grated cheese and cover loosely with foil.
  6. Cook in oven at gas mark 6 for 10 minutes. Then remove foil and cook for an extra 15 minutes.

Notes
