Ingredients
- 1.5kg (3lb 6oz) roasting potatoes, cut into even pieces
- 150ml (¼ pt) olive oil
- 2-3 tbsp sesame or poppy seeds, optional
- salt
Method
- Put the potatoes in a large pan and cover with cold water. Bring to the boil then drain, reserving the water. Return to the pan and cover. Shake vigorously.
- Heat the oil in a roasting tin on the hob. Add the potatoes. Cook at 200°C/400°F/Gas Mark 6 for 1–1½ hours, turning once, until crisp and golden. Add the seeds towards the end, if wished. Drain and season with salt.
