Ingredients
- duck breasts or fillets, skin scored
- salt and pepper
- runny honey, brushed over duck
- shallots, sliced
- mushrooms, sliced
- mustard
- honey
- white wine vinegar
- orange segments
- orange juice
- lamb's lettuce
Method
- Score the skin of the duck breasts or fillets and season with salt and pepper, then brush runny honey over them.
- Fry quickly on strong heat, skin side down. Add sliced shallots and sliced mushrooms, then turn the duck pieces over.
- Mix mustard, honey, white wine vinegar, orange segments and orange juice. Heat until blended to make the dressing.
- Slice the duck and serve with lamb's lettuce and the fried mushroom mix. Pour the dressing over.
