Ingredients
- 2 lb Desiree potatoes, in chunks
- 2 teasp salt
- pepper
- 2 oz butter
- 4 tablesp creamy milk
- single or double cream
Method
- Put 2 lb Desiree potatoes (in chunks) into boiling water — just enough to cover.
- Simmer for 20–25 mins. Drain and keep hot in pan.
- Add pepper, 2 oz butter and 4 tablespoons creamy milk.
- Break up potatoes with a fork, then use a hand whisk (electric) — gentle at first, then higher speed.
- If dry, add a little single or double cream.
