Potatoes Mashed

Ingredients

  • 2 lb Desiree potatoes, in chunks
  • 2 teasp salt
  •   pepper
  • 2 oz butter
  • 4 tablesp creamy milk
  •   single or double cream

Method

  1. Put 2 lb Desiree potatoes (in chunks) into boiling water — just enough to cover.
  2. Simmer for 20–25 mins. Drain and keep hot in pan.
  3. Add pepper, 2 oz butter and 4 tablespoons creamy milk.
  4. Break up potatoes with a fork, then use a hand whisk (electric) — gentle at first, then higher speed.
  5. If dry, add a little single or double cream.
