Ingredients
- 3 large carrots, coarsely grated
- 50g raisins
- 25g plain peanuts
- 1 large orange, zest and juice
- 2 tbsp olive oil
- 1 tbsp white wine vinegar
- a handful chives, snipped
Method
- Coarsely grate the 3 large carrots and stir in the raisins and plain peanuts.
- For the zesty dressing, whisk the zest and juice of the orange with the olive oil, white wine vinegar and snipped chives.
- Stir the dressing into the carrot mixture.
