Stotty Cake

Serves 6 cakes Cook 30 min

Ingredients

  • ½ quantity Basic White Bread Dough, made with half milk and half water
  •   Flour, for dusting

Method

  1. Knock back the proved dough. Divide into six equal portions. Shape each into a ball, then roll into a circle 1.5 to 2 cm (¾ to ¾ in) thick.
  2. Place the rounds on greased baking trays, cover and leave to rise in a warm place until doubled in size.
  3. Meanwhile, heat the oven to Gas Mark 6, 400°F, 200°C.
  4. Dust the rounds with flour, then push your thumb into the middle of each.
  5. Bake for 15 minutes, then reduce the temperature to Gas Mark 5, 375°F, 190°C, and bake for a further 15 minutes.

Notes

Dough should be made with half milk and half water. Rounds should be covered and left to rise in a warm place until doubled in size before baking.
