Ingredients
- 25g/1oz margarine
- 25g/1oz plain flour
- 300ml/½ pint milk
- 4 tbsp fresh parsley, chopped
- 2 large potatoes, grated
- ½ tsp salt
- 75g/3oz cornflour
- 1 large egg, beaten
- 4 spring onions, chopped
- 4 tbsp olive oil
- 4 gammon steaks

Method
- Melt margarine in a pan, whisk in flour and cook for 1 minute. Remove from the heat. Whisk in milk, return to the heat and slowly bring to the boil, whisking. Season and simmer for 2 minutes. Stir in parsley and keep warm.
- Mix together potato, salt and cornflour. Add egg, onions and seasoning. Heat oil and fry tablespoonfuls of the latke mixture until golden and crisp.
- Grill gammon, turning, for 4-5 minutes on each side. Serve with sauce and latkes.
