Gammon with Latkes and Parsley Sauce

Serves 4 Cook 30 min

Ingredients

  • 25g/1oz margarine
  • 25g/1oz plain flour
  • 300ml/½ pint milk
  • 4 tbsp fresh parsley, chopped
  • 2 large potatoes, grated
  • ½ tsp salt
  • 75g/3oz cornflour
  • 1 large egg, beaten
  • 4 spring onions, chopped
  • 4 tbsp olive oil
  • 4 gammon steaks
  •   seasoning

Method

  1. Melt margarine in a pan, whisk in flour and cook for 1 minute. Remove from the heat. Whisk in milk, return to the heat and slowly bring to the boil, whisking. Season and simmer for 2 minutes. Stir in parsley and keep warm.
  2. Mix together potato, salt and cornflour. Add egg, onions and seasoning. Heat oil and fry tablespoonfuls of the latke mixture until golden and crisp.
  3. Grill gammon, turning, for 4-5 minutes on each side. Serve with sauce and latkes.
