Mini Lemon and Mascarpone Tartlets

Ingredients

  •   mascarpone cheese
  •   lemon curd
  • 12 tartlet cases, ready-made
  • 12 raspberries
  •   icing sugar, for dusting

Method

  1. Beat together the mascarpone cheese and lemon curd until smooth.
  2. Pipe or spoon into the tartlet cases.
  3. Top each one with a raspberry. Dust with a little icing sugar and serve immediately.

Ready-made tartlet cases such as Rahm's, available from good delicatessens and supermarkets.
