Ingredients
- 2 tbsp olive oil
- 1 red onion, chopped
- 7 garlic cloves, chopped
- 100g/4oz lardons or smoked streaky bacon, cut into strips
- 350g/12oz red cabbage, finely shredded
- 2 tbsp red wine vinegar
- 2 tbsp demerara sugar
- 100ml/4fl oz apple juice

Method
- Heat the oil in a frying pan, add the onion and fry gently for about 5 minutes until softened. Add the garlic and lardons and fry for 5 minutes. Add the cabbage and fry gently for about 10 minutes, stirring all the time, until the cabbage is wilted and glistening.
- Stir in vinegar, sugar, apple juice and seasoning. Bring to the boil, cover and cook for 30 minutes until cabbage is tender.
Notes
Lardons are strips of smoked bacon. They are available from larger supermarkets, but you can use smoked streaky bacon instead. This can be made earlier in the day as it reheats well.
