Ingredients
- 350g (12 oz) cooked chicken
- 75g (3 oz) butter, softened
- 3 tbsp mango chutney
- 2 gherkins, finely chopped
- salt
- ground black pepper
- 8 slices white bread
- 8 slices brown bread
Method
- Process or finely chop the chicken.
- Place the chicken in a bowl and add the softened butter, mango chutney, chopped gherkin and seasoning. Mix thoroughly.
- Cut the crusts off both white and brown bread. Roll each slice with a rolling pin and cover with the chicken filling. Roll like a Swiss roll and wrap in greaseproof paper.
- Place in the fridge for 1 hr and cut into thin slices.
Notes
To freeze: Wrap the unsliced rolls in foil and use within one month.
