Chicken Pinwheel Sandwiches

Ingredients

  • 350g (12 oz) cooked chicken
  • 75g (3 oz) butter, softened
  • 3 tbsp mango chutney
  • 2 gherkins, finely chopped
  •   salt
  •   ground black pepper
  • 8 slices white bread
  • 8 slices brown bread

Method

  1. Process or finely chop the chicken.
  2. Place the chicken in a bowl and add the softened butter, mango chutney, chopped gherkin and seasoning. Mix thoroughly.
  3. Cut the crusts off both white and brown bread. Roll each slice with a rolling pin and cover with the chicken filling. Roll like a Swiss roll and wrap in greaseproof paper.
  4. Place in the fridge for 1 hr and cut into thin slices.

Notes

To freeze: Wrap the unsliced rolls in foil and use within one month.
