Country Soup

Ingredients

  • 4 potatoes, peeled and cut into small pieces
  • 4 carrots, peeled and cut into small pieces
  • 2 onions or leeks, cut into small pieces
  • 1 piece turnip, cut into small pieces
  • 3 small cabbage heart, shredded thinly
  • 2 large tomatoes, skinned and chopped
  • 2 oz margarine
  •   salt and pepper
  • 2½ pints stock
  • 1 tablespoon parsley, chopped
  • 1-2 oz cheese, grated

Method

  1. Peel and cut root vegetables into small pieces, shred cabbage thinly, skin and chop tomatoes.
  2. Melt margarine in pan, add prepared vegetables and toss over gentle heat for 5-10 minutes.
  3. Add seasoning and stock. Cover, and simmer 30-40 minutes.
  4. Pour into soup dishes and sprinkle with chopped parsley and cheese just before serving.
