Ingredients
- 4 potatoes, peeled and cut into small pieces
- 4 carrots, peeled and cut into small pieces
- 2 onions or leeks, cut into small pieces
- 1 piece turnip, cut into small pieces
- 3 small cabbage heart, shredded thinly
- 2 large tomatoes, skinned and chopped
- 2 oz margarine
- salt and pepper
- 2½ pints stock
- 1 tablespoon parsley, chopped
- 1-2 oz cheese, grated
Method
- Peel and cut root vegetables into small pieces, shred cabbage thinly, skin and chop tomatoes.
- Melt margarine in pan, add prepared vegetables and toss over gentle heat for 5-10 minutes.
- Add seasoning and stock. Cover, and simmer 30-40 minutes.
- Pour into soup dishes and sprinkle with chopped parsley and cheese just before serving.
