Ingredients
- 450g/1lb tomatoes, peeled and chopped
- 2 spring onions, sliced
- 1 tbsp extra virgin olive oil
- 2 tbsp fresh basil, chopped
- seasoning
Method
- Mix the ingredients together in a large bowl or whizz briefly in a food processor if you like a less chunky result.
- Chill for 1-2 hours. Serve the salsa with grilled lamb chops or fish, or stir into hot pasta just before you serve it.
