Meat Pies

Ingredients

  • 13 oz. Jus-rol Puff Pastry
  • 4 ozs. pork sausage meat
  • 4 ozs. bacon, minced
  • 4 ozs. veal cutlets or pork, minced
  • 2 eggs, hard-boiled, sliced
  •   ground mace
  •   salt
  •   pepper
  • a little water
  •   egg, beaten, for glazing

Method

  1. Put veal (or pork) and bacon through a mincer and mix with sausage meat, seasoning, mace and a little water.
  2. Roll out pastry to the thickness of a penny and cut into 3-inch circles.
  3. Place a spoonful of meat mixture on half the pastry rounds. Add a slice of hard-boiled egg and cover with more meat mixture.
  4. Use the remaining pastry rounds as lids to cover the pies. Make slits on top and brush with beaten egg.
  5. Bake at 400°F (Mark 6) for 15 minutes, then reduce heat to 350°F and bake for a further 20 minutes. Serve hot or cold.
