Weekend Omelette

Ingredients

  • ½ tsp olive oil
  • 75g (3oz) mushrooms, sliced
  • 2 eggs, beaten

Method

  1. Heat ½ tsp olive oil in a frying pan. Add 75g (3oz) sliced mushrooms and stir-fry over a high heat for 3-4 minutes until golden.
  2. Meanwhile, beat 2 eggs in a bowl and season with salt and freshly ground black pepper.
  3. Add the eggs to the pan, tilting it around so the mixture covers the base. Cook for 2-3 minutes until the omelette is golden brown underneath and set.
